Vegetarian Tom Yum Noodles

My colleague, T, brought me some noodles which she'd cooked this morning.

She had in there shredded cabbage, carrots and kelp and egg noodles, stir-fried with egg and some tangy tom yum spices. It was not very spicy, but it was super sour!! Lol.

Really, she's been doing a great job, spreading green eating awareness around the school. I really salute her effort, and of course, I feel so blessed each time she comes with some offering of vegetarian food. I must do something for her in return. Next week. :)
