Prawn Fritters

This is the old-fashioned prawns coated in flour batter ....

Prawn Fritters
Coated in batter and deep-fried over high heat, the prawns retained their juicy sweetness. 

Mom hardly deep-fries anything .... but today, she decides to deep-fry prawns. For bro cause he likes them, and so Mom is making it specially for him.

I asked Mom what goes into the batter .... and here's her recipe : 4 tablespoons of flour, 1 tablespoon of potato starch and 1 tablespoon of corn starch, a bit of salt and pepper, 1/2 an egg and a few drops of vinegar. The vinegar adds to the crispiness of the crust. How about the water? Hmn .... Mom said she did not measure .... Lols

Anyway .... the prawns were yum .... the pastry was not too thick, slightly puffed up, not hard, and had a savoury taste. Perfect with the fresh and juicy prawn it encased.

And since Mom was deep-frying prawns, she decided spontaneously to deep-fry some chicken as well. Lols. She had intended to grill them and had marinated them .... but then to save time and energy, decided to just throw them into the wok as well.

Fried Chicken 

Well .... I had a piece fresh off the wok .... while hot, the chicken was real juicy and tasty. Loved it!
